Beyond Biscuits

   I decided yesterday that a birthday cake was in order.  Einkorn Carrot cake with cream cheese icing filled the bill quite nicely. While pleased with the results, it occurred to me that many don’t think of einkorn when it comes to a celebration pastry.  Perhaps they should, thus I share the pictures and my thoughts.  I mentioned before the book Einkorn by Carla Bartolucci, this cake is in there.  I have yet to find shortcomings in that work.
